Mackerel Pate 'St Clements'

200g smoked mackerel fillets, boned, skinned and flaked
100g low fat soft cheese
2 tablespoons of lemon juice
2 tablespoons of orange juice
A few sprigs of fresh parsley, chopped
Freshly ground pepper to season and garnish


  1. Place all the ingredients into a bowl and either mash it together well or use a food processor (depending how smooth you like your pate).
  2. Season with freshly ground pepper to taste
  3. Spoon into serving dish or dishes. Cover and put in the ‘fridge for 2-3 hours.
  4. Garnish with a little freshly ground pepper

Serving suggestion:
Serve with slices of toast or pitta bread, or carrot sticks
